Sweet Potato Black Bean Burgers

We absolutely LOVE sweet potatoes around here and honestly, we eat them almost every day in one form or another...sweet potato fries, baked sweet potatoes, sweet potato soup, and now "burgers."

This is super easy, although I think I will play around with the recipe next time to make them not so mushy.  They have a really good flavor.  Don't be surprised though when you so you put these in the skillet and they just look like a lump of pureed potatoes and black beans!  They will firm up enough to flip, trust me! I served them on toasted whole wheat bread, but really I think they would be good just wrapped in lettuce!  Spread some avocado for a topping and slice some tomatoes too!
